ANCIENT WOOD-FIRED OVEN BY CARLO IN MONTEBRUNO

In the green paradise of the Trebbia Valley, not far from Genoa along state road 45 leading to Piacenza, which cuts through the small centre of the ancient village of Montebruno, now 210 souls, is the 'pasticceria da Carlo', which has been producing sweets with a lovely history and great quality, such as the famous Canestrelli di Montebruno, since 1886.

These are shortcrust pastry biscuits with an unmistakable taste, whose origin seems to date back to the Middle Ages and which were rediscovered in Liguria in the 19th century. Following the ancient tradition, the shortcrust pastry is prepared and left to rest for a whole day, then rolled out and cut using flower-shaped moulds. The Canestrelli are thus prepared for baking in a wood-fired oven and are ready to be distributed throughout Genoa and beyond online.
