They are distinguished by their scalar ripening, which means that at the same time olives with different degrees of ripeness, green, purple and black, are on the tree. This characteristic, together with the genetics of the fruit and the territory of cultivation, gives a very fine extra virgin olive oil, famous worldwide for its sweetness and harmony.

Boeri's Monocultivar Taggiasca is an extra virgin olive oil obtained from 100% Taggiasca olives whose cultivation extends from 0 to 600 metres above sea level. Precisely for this reason, the ratio between green, dark and ripe Taggiasca olives is extremely harmonious and perfectly balanced.
