LET'S TASTE LIGURIA THE 'SARDENAIRA'
A contemporary of the Neapolitan pizza, the 'sardenaira' is an excellence of western Ligurian cuisine that Andrea Doria, the great leader of the ancient Genoese Republic, was crazy about, which is why it is also known as Pizza all'Andrea.
The 'sardenaira' is a very old pizza
from Liguria that dates back to the late Middle Ages. It is no coincidence that
the oldest recipe does not include the use of tomato in the sauce (as is the
case today), the spread of which in European cuisine occurred one to two
centuries after the discovery of America. It seems that 'sardenaira' was
Admiral Andrea Doria's favourite dish in its pre-Columbian version: a leavened
flatbread seasoned with olive oil, garlic and salted anchovies.
"Gustiamo la Liguria" (Let's
taste Liguria) is a project implemented by Confartigianato Liguria with the
co-financing of the Liguria Region, Training Department, and in cooperation
with Valbormida Formazione, with the aim of enhancing Ligurian products of
excellence. The protagonists of the project were the students of the
Professional Education and Training Courses for Catering Operators. Each
selected student created a dish, with the accompaniment and supervision of
teacher Sandro Usai and with Renata Briano, Ligurian food blogger and
exceptional testimonial.
