The Esposito dairy, founded by Erasmo
Esposito, was established in 1956 in Brugnato, a characteristic village in the
Val di Vara, in the province of La Spezia, in the eastern of Liguria. It is an
artisan family business that has grown over time by integrating sons,
daughters-in-law and grandchildren, maintaining and handing down respect for
nature and artisan know-how in the dairy sector.
No chemical anti-fermentatives are used
in the processing of the products. Among the most popular and sought-after
specialities are mozzarella fior di latte, fresh ricotta, caciotta, stracchino,
natural yoghurt and mature cheeses with a unique and typical flavour.
