English journalist John Dickie, a connoisseur of pesto, wrote 'Italian food is charismatic because of its almost poetic relationship with territory and identity'.
Pesto Genovese is an
exceptional sauce and a flagship, but it is also poetry, felt by half the
world, as demonstrated by the World Championship of Pesto Genovese al Mortaio
held every two years in Genoa and attended by competitors from all over the
world. And it is music.
In "Creuza degli ulivi", Bruno Morchio (a
famous Genoese writer of mystery books set in Genoa and Liguria) makes his
protagonist Bacci Pagano say that "Cooking is like music. Unlike language,
there are no impassable lexical or phonetic barriers. All you need is the right
tools and the right ingredients. Focaccia is like a sonata, pesto a string
quartet...".
